Step 1: Everything cools everything
That may sound extra, but it helps. Put your coconut milk and mixer in the fridge for 10 to 15 minutes before you start. Cold ingredients mix smooth and the shaking ends thicker. If you skip this, it’s still good, but the cold makes a difference.
Step 2: Try the coconut milk
Before you pour it out, grab a spoon and try your coconut milk. Some are thick and rich, others are thin and watery. If it is too thin, add more coconut cream or crushed coconut to thicken them. This helps the shake to feel more satisfactory.
Step 3: Build it in layers
Start with coconut milk in the mixer. Add the Pandan extract. If you have never smelled Pandan, it is like vanilla how vanilla grass has achieved best. Tropical, sweet but earthy.
Then add your sweetener, vanilla extract (if used), a pinch of salt, crushed coconut or coconut cream and finally your ice cream.
Why ice last? Because when your blender’s blade hits liquid first, it is not reduced. You want a smooth mix, not a blender that sounds like he was eating stones.
Step 4: Mix it slowly, then quickly
Start slowly. Simply pulsate impulse once or twice. Let the ingredients mix. Then kick the full strength for 30 to 45 seconds until it is thick, icy, smooth and green like a summer leaf.
If it is too thick for your taste, add a tablespoon of cold water and mix it again. Too thin? A few ice cubes or more coconut will fix this.
Tast time
Before pour it into a glass – always try it. Is it sweet enough? Do you want more Pandan? Do you need more salt to compensate for it? Fix it now before the whole thing is poured.
Here you can make it your own. I like mine with extra pandan, only on the edge of grassy sweetness. You may like it milder.

You have to cook the leaves with coconut milk, leave them steeply and then strain – but that is for another day you have more time on.
At the moment the filled stuff does the work and it still tastes fantastic.
