You don’t have to be Lebanese to enjoy this breakfast. But after trying it once, you may want you to be.
This is not your usual egg and toast meal. It is faster, it has a taste that beats far above its weight and it does not destroy its keto plan. The combination? Soft labneh. Hot fried eggs. A good shaking of Za’atar. That’s it. You hardly need ten minutes and you eat something that feels like a café breakfast without leaving the house.

What is Za’atar and why it is so good
Za’atar is a spice mix from the Middle East. But it is really like calling it “just a spice mix” as if you were called “just a vegetable”.
It is earthy, lemon and a little nutty, with sesame seeds and Sumac that give him a nice elevator. It makes boring stuff interesting. Think of scrambled eggs, simple yoghurt, chicken, flat bread … sprinkle za’atar on that and you have just erected your meal. No hard work needs.
Most Lebanese kitchens have a glass somewhere, usually homemade or picked up from someone cousin who does it better than the supermarket. If you find one that is difficult on Sumac and smells fresh, get yourself. You will use it more than you think.
What is Labneh?
Labneh is tense yogurt. Simply that. It’s thick like cream cheese, but tastes fresher and lighter. In Lebanon it is eaten with olive oil, bread or vegetables. Here we draw it under a few eggs.
If you cannot find Labneh in your local business, you can do it. Just take a simple yogurt, put it in a cheese cloth or a clean kitchen towel, tie it and let it hang in the fridge over a bowl overnight. In the morning you have Labneh. Salt it a little. Completed.

No bread. No sugar. Only fat, protein and taste.
Eggs are keto gold. Labneh has fat and only a few carbohydrates. Za’atar? Almost none. Add a splash of olive oil and you meet all macros without getting bored.

How to make it keto eggs with Za’atar & Labneh
Step 1: Prepare your plate
Spoon the Labneh in two flat bowls or a large plate. With the back of the spoon, spread it into a small circle, just as you make a bed for the eggs. Drizzle a small olive oil over the top and sprinkle a little Za’atar. Not everything – just enough to give him color and smell.
Set aside.
Step 2: Fry the eggs
Heat a tablespoon of olive oil in your pan. Medium heat. You want the white ones to cook slowly and the egg yolk stay soft. Crack the eggs. Don’t hurry. Let the edges become a little crispy if you like that.
Salt it lightly. You can add chili flakes here if you have warmth.
As soon as the white ones are defined and the egg yolks are still liquid (or by this if this is your thing), take them from the heat.
Step 3: plate it
Push the eggs onto the Labneh. Sprinkle the rest of your Za’atar over it. Add a few torn herbs when you have them and another splash of olive oil.
Serve immediately. Eat with a spoon.
What to eat with it
It is good in itself. But if you want to make it on the way or turn into more spreads, you can throw a few things on the table here:

A little story (because why not)
I learned that from my friend Mariam. We were both broke in our twenties and cooked “Whatever we can find in the fridge.” She brought Labneh out of her mother’s square and hid it in my fridge as if it were gold.
One morning she heated a few eggs, threw her on a plate with a labneh and Za’atar and told me that I should hold and eat the flap. I did it. It was perfect.
We ate that for months. Not just for breakfast – sometimes for lunch, sometimes after a long night. It never got old.

One more thing: buy good za’atar
Not all Za’atar are done the same. Some brands load it with wheat or random fillers. Real Za’atar should smell sharp and fresh, with visible sesame and Sumac. If it smells of dust, it probably tastes of dust.
If you can, find a grocery store from the Middle East or order online from someone who knows what he is doing. You will use it much more if you find out how good it is more than just eggs.
