Step 4: spices, all in

Now the funny part. Add your cumin, peppers, coriander and cayenne. Stir everything well so that the meat is covered.

You will smell the change – earth, warm, a little smoky. Let it cook for 2-3 minutes so that these spices wake up properly.

If it looks dry, you are not afraid to add more oil or a tablespoon of water. You don’t bring that to death.

Step 5: crack in the eggs

If you push the meat a little to the edges, create a place in the middle. Break into your eggs one after the other.

Just let them sit a one or two minutes before stirring. Some people like the eggs that were gently thrown into the beef. Others like to leave the egg yolk completely and cover the pan for a minute, so they cook from steam.
