Okay, I understand. Everyone and their cousins tried to make this fluffy, looking Korean coffee when the Internet was crazy about Dalgona coffee some time ago. It was everywhere. Tikok, Instagram, the Facebook page of her aunt Carol.
But here is the thing, most of these recipes were loaded with sugar. Sweet, safe. Keto-friendly? Absolutely not.
And if you make keto … sugar is a bit the enemy.
So what do we do if we want the pretty coffee, but have to stay with low carbohydrates with low -carbohydrates? We are getting smart.
Here this Korean coffee from Keto in Dalgona comes into play, creamy, a little bit bitter, a little sweet and zero to blame.
You will only need 5 minutes, a few ingredients and maybe a little arm strength (unless you have a hand mixer because they are so fantastic).
Wait … what is Dalgona coffee anyway?
Fast background story for the late arrivals:
The coffee in Dalgona started to trend hard in South Korea. It is named after a Korean sweets (Dalgona) that looks like the foam above this drink.
It is basically whipped, coffee sits on the milk. Super easy, but looks like they had bought it in one of these overpriced hipster cafes.
Usually people use instant coffee, sugar and hot water. Whip it until your arms hurt (or until the mixer does his job) and pour over the ice or hot milk.
But normal Dalgona uses sugar – much of it.
Keto people like us? Will not happen.
So … can you even prepare Dalgona coffee without sugar?
Absolutely. But here is the truth that nobody says: Not every sugar substitute is well for whip of coffee.
Some make it too fluid. Some taste strange. Some will not whip at all and let them cry in a sad bowl of brown soup.
But after playing around in the kitchen like a crazy scientist, I found out what works best.
What you need
Okay, here is the grocery list – don’t worry, it’s tiny.
Ingredients:
-
2 tablespoons of instant coffee (simple, unsweetened)
-
2 tablespoons of powdered sweeteners (such as erythritol, allulose or monk fruit – but make sure it is powdered)
-
2 tablespoons of hot water
-
Unsweetened almond milk or keto -friendly milk
-
Ice (optional, but come on … eced coffee is life)
Tools:
-
A bowl (big enough so that coffee doesn’t fly everywhere)
-
A hand mixer or a good old whisk if you want to build muscles
-
Spoon (to draw this fluffy magic)
-
Glass or mug for serving
Let us do this thing
Step 1: Mix it together
Throw the immediate coffee, the sweetener powder and hot water in your bowl.
That’s it. Just three things.
If your sweetener is not powdered, grind it. It makes a big difference.
Step 2: whip it … whip it well
Use a hand mixer at medium to high speed. If you do this by hand with a whisk – bless your soul – it can take 7 to 10 minutes.
You are looking for a thick, light brown foam. The way that holds shape and everyone looks silky and chic.
Tip: If it doesn’t whip off well, add a little more sweetener. Just a bit.
Step 3: Prepare your glass
Fill your glass with ice (or keep it clear when you get hot). Pour in your ketom milk of your choice. Leave a small place above.
I like almond milk or coconut milk, but also hey, also Macadamia milk.
Step 4: Spoon on this fluffy coffee cloud
Take the beaten coffee directly over the milk. Stack it nicely and high as if you are extra.
Optional movement: whirl it a little with a straw so that you get a mixture of coffee and milk in every sip.
Step 5: sip and feel unusual
That’s it. Take your pictures for the gram when you have to. But mostly? Lean back and enjoy.
What does this box of Keto Korean Dalgona taste?
Keto Dalgona coffee hits a little differently.
-
It’s strong (you Are Use of instant coffee directly)
-
Sweet, but not so sticky sweet from sugar
-
Creamy when it mixes with the milk
-
Refreshing, especially driven
Honest? It’s like drinking Iced Latte foam, but better because it feels homemade and particularly feels.
A few tips so that you don’t screw it up
-
Use instant coffee, no ground coffee beans. Trust me, you don’t whip.
-
Only Pulvered Sweatener – granulate does not really dissolve.
-
Hot water helps the coffee to dissolve faster and lash more easily.
-
Whip longer than you think. It will arrive there.
But wait … Can you make it without sweetener at all?
Okay, here is the honest part: you may Whip it without a sweetener, but the foam will not hold so well. It is feasible, but more bitter.
If you are super hardcore keto and have sweet things – do it. But most people (I have included) a little cute.
Best keto sweetener for Dalgona coffee
Here is what actually works when you look at it in my kitchen science laboratory:
If I would have to choose a winner – allulose. All day.
Fun extras (if you want to get fancy)
-
Splash unsweetened cocoa powder over it
-
A little shot cinnamon
-
Sugar -free vanilla syrup in your milk
-
Use Decaf Instant Coffee for a night drink
Storage?
To be honest, Dalgona Foam is not very good. It empties after a while. Best fresh.
But if you really want to prepare in advance, whip it and keep it in the fridge for a few hours. Stir before use.
Why Keto Dalgona Coffee only meets differently
Look, keto snacks and treats are everywhere. But most of them are like sad conclusions of the real thing.
But this coffee? It doesn’t feel like a compromise.
It looks cool. It tastes cool. There are big “I know what I’m doing in the kitchen” energy without actually needing barista skills.
And if you are balanced this first sip, bitter coffee, cold milk, sweet foam, all in a glass?
Play over.
